Landshut is a lovely town full of old buildings to visit, dating from the medieval, right up to some great examples of Baroque. Distances are not long, but as this is a great long week end destination, it makes sense to hire a car to see it all. The Isar river runs right through the town and there is a distinct old medieval town and Baroque 'new town'. Try a visit to the tallest brick church tower in the world, at St Martins Church. Then drive up the hill to visit the old castle. 'Trausnitz Castle' was started in 1204, but has been added to so many times since then that it makes for a very interesting building to look over. Or put a cold lunch in the boot of your car rental and take a drive along the Isar river. It's very green and pleasant, and there are small islands and places to stop for lunch. If you drive further you will also come across the 'Isartalverein' which are protected areas along the river. First designated in 1904 to protect the natural beauty of the Isar valley, they now form a criss cross of hiking paths.
